The GDPR protects the personal data regardless the technology used to process those data. The protection is neutral in the technological point of view and applies both to the automatic process and the manual process, as long as the data is organized according to pre-defined criteria (in alphabetical order, for example). The way the data is stored is also irrelevant. In all cases, personal data is always subject to the protection requirements established in the GDPR.
